Rustic Peach Pie

I love the fresh peaches in the summer, and I always look forward to making a peach pie.

 

If you know me, then you know I love to make anything that requires a rolling pin.  Yes it’s true. I can’t explain it, I just love using a rolling pin and wearing an apron. (I know I sound like your grandma, right?)

 

The other reason I love to make a pie crust is because I have a really good recipe.  The special ingredient in my crust is buttermilk!

 

The secret to rolling it out properly is to get the dough dry enough so it doesn’t stick to the counter, but not so dry that it cracks.  I always put flour on my counter top and on my rolling pin. I love using my inherited vintage rolling pins but honestly it is best to use a chilled marble rolling pin to keep the dough from sticking. Just put the rolling pin in the freezer for a few minutes; that should do the trick.

 

RUSTIC PEACH PIE

2 1/4 cup sifted all purpose flour

 

1 teaspoon salt

 

1 tablespoon sugar

 

3/4 cup butter

 

1 egg yolk

 

1/4 cup buttermilk

 

7 to 8 peaches, peeled and sliced

 

1 cup sugar, or sweetened to your taste

 

1/2 teaspoon cinnamon

 

2 tablespoon butter

 

 

·   Sift flour with salt and sugar. Cut in butter until mixture resembles fine crumbs (don’t be in too much of a hurry here it needs to be very fine.)

 

·  Beat egg yolk; blend in buttermilk. Add to dry ingredients, tossing with fork into a soft dough. Don’t handle any more than you have to for he flakiest crust

 

·  Form the dough into a ball. Flatten on lightly floured surface. Roll to about 1/8 inch thick. Roll crust until it is thin but to where it can still be folded over. Place in baking dish.  Let dough hang over sides of baking dish.

 

· Preheat oven to 450 degrees F.

 

· Combine peaches, sugar and cinnamon, and pour into dish.  Dot with butter.  Fold dough over fruit.

 

· Bake for 30 minutes, or until pleasingly browned!

 

The most important ingredient for a delicious peach pie is to start with delicious peaches. If they aren’t tasty, your pie won’t be either.

    I’m totally pinning this! We went last weekend to a nearby orchard and got a whole bunch of peaches. I just froze a whole bunch and the ones turning bad I’m planning to make peach preserves with. Looks delicious!

    I so want to make this, but while writing it down saw there is a discrepancy. The list says “butter” but the directions say shortening.

    Can either be used?

    I’m with you on the whole rolling pin/apron thing. I walked down to the mailbox in my apron the other day, and I think the neighbors thought they’d stepped back in time a few decades. You should’ve seen the looks!

    My very favorite pie is peach pie in any shape or form. Cobbler or pie, doesn’t make a bit of difference – I just love it.

    Peach is my most favorite type of fruit dessert…especially peach cobbler. This pie looks absolutely yummy and the fact that the pie crust is so easy to do makes it even better! Now to find some fresh peaches!!

    I’m back to tell you I tried your pie crust recipe this past weekend and it came out fabulous! It was my first pie I have ever made, but hubby didn’t want peaches (after I bought them, lol) so I used granny smith apples for him. I will try peaches (for me) next time and maybe even cherries another. That pie crust is DELICIOUS and so easy to make. Thank you!
