Roast Asparagus

I love to roast vegetables, it’s easy and my family loves veggies prepared this way.   I always add the Extra Virgin Olive Oil (EVOO for you foodies out there) after cooking, since high temperatures destroy some of the health benefits of the olive oil.

 

I also roast green beans, broccoli, zucchini, yellow squash, and many other vegetables this way.

 

Here is the recipe.

 

 
 
 
ROAST ASPARAGUS
1 lb. of Asparagus
Extra Virgin Olive Oil
Salt
1 Lemon
Wash asparagus, and snap off hard ends of stalks.  Place them in a single layer and roast (Bake) in the oven at 375 degree F for about 5 or 6 minutes.  (Do not overcook.)  Remove from oven, drizzle  with EVOO, and then salt. Transfer asparagus to serving plate, and add lemons as a garnish.

    Roast vegetables are my favorite… I cook them at least a couple times a week. Typically I use the EVOO before cooking so I’m going to try this!

    Thanks for the tip on Olive Oil. I added the olive oil then put them in the oven to roast and we nearly had to call the fire department. The smoke was horrid. Oh, yes! Did I mention that we had our Dinner Group here that evening??? Talk about embarrassed!!! I’ll try your recipe, next time!!!

    Anita, this is the ONLY way I like to eat asparagus. I’ve never added lemon. It sounds yummy and your photos could easily be a foodie magazine!
