Ranch Enchiladas

After working all day at the ranch, or even if we’re just chillin’ on the back porch, my family loves these Ranch Enchiladas for dinner. 

I made them recently and thought I would share them with you.  The enchiladas are filled with cheese, and have a meat sauce on top.

RANCH CHEESE ENCHILADAS  
1 1/2 cup shredded Pepper Jack
1 1/2 cup Cheddar cheese
1 1/2 cup caramelized onions (see note)
12 corn tortillas
Hot oil
Shredded Cheddar cheese
Muy Rico Red Sauce (recipe follows)
Mix cheeses and onions well. Heat corn tortillas in microwave to soften; place tortillas on counter or table. Roll cheese mix inside tortilla and place in pan. Top with shredded Cheddar. Bake at 350o until cheese is melted. Top with Red Sauce or serve red sauce on the side. Yield: 4 servings.
Note:   To caramelize onions, place sliced onions in skillet, drizzle with a little oil and cook slowly over low heat about 15 minutes. until browned and caramelized.
MUY RICO RED SAUCE
1/2 cup olive oil, divided      
1 pound ground beef (optional)
1 1/2 cup finely chopped carrot
1 1/2 cup finely chopped onion
1 1/2 cup finely chopped celery
1 1/2 teaspoon sugar
2 teaspoons salt
1/3 cup finely chopped garlic 
2 pounds vine-ripened plum tomatoes or 2 cups canned Italian plum tomatoes
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh basil or 2 teaspoons dried basil
Heat 2 tablespoons oil in stockpot. Add beef, carrot, onion, celery, sugar and salt; cook 4 to 5 minutes on medium heat. Add garlic and cook 1 to 2 more minutes. Add tomatoes. Cook uncovered 30 minutes. Add pepper, basil and remaining oil (optional) and cook 5 more minutes. Taste and correct for salt if needed. 
Note: This sauce can be made ahead.


My note on the recipe says, “Blue Agave” so apparently that is where I got it. 

Sorry for the limited photos, but my family was hungry and very unhappy when I told them they had to wait until I took some pictures.

    This looks fabulous! The pics are just gorgeous. It’s almost like you can smell it. Ugh, now I am hungry again! I can sympathize with the pics and family. My hubby is getting tired of me taking pics of his food! Atleast I am not taking pics of him eating his food!

    Yes Marilyn, I do remember!! I would love to chat about blogging any time. I am still very much a newbie though, since I just started in March, but I would be happy to share what I have learned. The camera is a basic Cannon Rebel XT, but the lens, is a Cannon L series Professional 135 mm, 2.0 f lens. It does an awesome job too!!

    Looks incredible and I love that you make your own sauce. I will have to make these and instead of tortillas I could use coconut ones or crepes and I could have it-GAPS diet.
    Do you ever make the clear sauce which is some kind of tangy mild chili, onions and a small amount of tomates? I cannot figure out how to make that but wonder if you would because you did a great job here! Thanks!
