I made them recently and thought I would share them with you. The enchiladas are filled with cheese, and have a meat sauce on top.
My note on the recipe says, “Blue Agave” so apparently that is where I got it.
Sorry for the limited photos, but my family was hungry and very unhappy when I told them they had to wait until I took some pictures.

This looks fabulous! The pics are just gorgeous. It’s almost like you can smell it. Ugh, now I am hungry again! I can sympathize with the pics and family. My hubby is getting tired of me taking pics of his food! Atleast I am not taking pics of him eating his food!

Yes Marilyn, I do remember!! I would love to chat about blogging any time. I am still very much a newbie though, since I just started in March, but I would be happy to share what I have learned. The camera is a basic Cannon Rebel XT, but the lens, is a Cannon L series Professional 135 mm, 2.0 f lens. It does an awesome job too!!

Looks incredible and I love that you make your own sauce. I will have to make these and instead of tortillas I could use coconut ones or crepes and I could have it-GAPS diet.
Do you ever make the clear sauce which is some kind of tangy mild chili, onions and a small amount of tomates? I cannot figure out how to make that but wonder if you would because you did a great job here! Thanks!
