When my MIL used to spend time with us at the ranch, she loved to say that say we always ate well out here. I am wondering if maybe she was referring to the meals she made, but really, that is besides the point. The real point is that for some reason, everything just tastes so delicious out here. I am guessing that there are mainly two reasons for that, one is that we have worked up an appetite, and two we usually eat outdoors, which makes everything taste better. Since the ranch is pretty secluded, so going out to eat is usually not worth the effort, so we mostly eat at home.
My daughter asked me to make our Ranch Stroganoff with Amish Egg Noodles recently. I thought I would share the recipe with you.
I don’t like using a mix, since they often have MSG in them. This recipe is very old and it uses simple ingredients.
Here is the recipe.
1 ¼ pounds boneless beef sirloin
Salt and ground black pepper to taste
3 tablespoons all-purpose flour
6 tablespoons butter, divided
14 ounces of beef broth
1 cup sour cream
3 tablespoons tomato paste
1 onion, diced
16 ounces fresh sliced mushrooms
1 package home-style egg noodles
Season beef generously with salt and pepper. Cover and let stand 2 hours in cool place. In large skillet, whisk flour and 3 tablespoons butter over low heat until mixture bubbles and forms a smooth paste. Slowly add beef broth, stirring constantly until mixture thickens. Let boil 2 minutes.
Reduce heat and add sour cream alternately with tomato juice, still whisking. Simmer slightly 1 minute; do not let boil. Inseparate skillet, quickly brown beef and onion in 1 tablespoon butter over medium heat. Add contents of meat pan to sauce; season with salt and pepper. Sauté mushrooms in remaining 1 tablespoon butter, then add to meat mixture. Simmer very gently 20 minutes.
