Ranch Chicken Salad

Recently Mr. CH has been clearing a path through the woods to the creek.  He had been working hard and requested I make homemade chicken salad for lunch.

I thought that was a great idea and wanted to share it with you.  I wish you could come for a visit so we could enjoy it on the back porch.  I feel like I know so many of you from reading your comments, emails, and your wonderful blogs.  Why don’t we live closer???

The wildflowers in the coke crate are from a previous post, click here.  The faux finish on the table is is from a previous post, click here.  I faux finished the table a few years ago.  And the silver serving spoon is from a service for 8 that I got on eBay for $25.  The set was in pristine condition and it came with the box.  I can’t buy a decent set of stainless for that price.  One of the secrets I have found to finding a great deal on the silver is to find silver with a monogram.  If it has a monogram, fewer people want it.

The table runner is a vintage feed sack, shown below.

Cedar Hill Chicken Salad

4 Chicken breasts
3 Stalks of celery, diced
1/3 Cup diced onion
1/2 Cup dried cranberries
2/3 Cup diced walnuts or pecans
1/3 Cup sweet pickle relish
Helman’s Mayonnaise


Roast or bake chicken in the oven at 350 degrees covered until cooked through, about 30 minutes.  Remove from oven when done, and dice after it cools.  Then add next 5 ingredients and stir.  Add enough mayonnaise to cover, adding more or less to your taste, stirring until completely incorporated.  Serve on bread for sandwiches or on a bed of lettuce for a salad.

    Our hard working men so deserve a little culinary love and appreciation from us! This chicken salad looks fabulous! I love that you used sweet pickle relish in this yummy recipe! I make a zucchini relish that would works well in it too.

    Anita,
    I could not wait to try your delicious chicken so I swithched up my menu and had Tuesdays menu last night. Your chicken salad was delicious!!! We ate it on a bed of butter crunch lettuce from our garden, Fabulous! I have a little left over so I’m saving it for lunch. Thank you so much for sharing this tasty recipe. I’m sure it will be a StoneGable favorite!
