Greek Salad Yummy Yummy

My family loves Greek salad.

And I love that it seems to go with about any entree that I serve.  With the cucumbers, tomatoes, and lots of Feta cheese, how could it go wrong?

I love to make my own salad dressing since that way I know it is fresh, has no preservatives and no MSG.  This salad dressing is about as easy as it gets.

 

Here’s the recipe.

GREEK SALAD

 

3 large cucumbers, peeled, seeded, and cubed

 

3 large tomatoes, cut into thin wedges

 

1 large onion, chopped

 

1 (10-ounce) jar pepperoncini salad peppers, drained

 

1 (7-ounce) package feta cheese, crumbled

 

10 to 15 Greek black olives

 

1/2 cup olive oil

 

1/2 teaspoon dried oregano

 

1/4 teaspoon salt

 

1/4 teaspoon freshly ground pepper

 

1 large head romaine lettuce, torn

 

Combine first 10 ingredients; cover and chill at least 1 hour. Just before serving, toss vegetable mix­ture with romaine. Yield: 6 to 8 servings.

Note: If we are not going to eat all of the salad at one meal, then I make a dressing and serve it seperately.  When I make a seperate dressing, I use

Greek Salad Dressing (optional)
1/2 cup Extra Virgin Olive Oil,
1/4 cup freshly squeezed lemon juice
3/4 teaspoon oregano
salt and freshly ground pepper to taste
Combine and serve.

    This looks so good! I’ve never made Greek Salad but I love all of the ingredients and the dressing sounds wonderful — pinned this! Would be so good for our summer meals!

    Dear Anita
    Congratulations! You have done a real wonderful GREEK salad! Here in Greece from May onwards until October every day eat this salad. But instead of 1 (10-ounce) jar pepperoncini salad pepper, we put raw peppers. You test with raw peppers, the taste is different. Is delicious but if we put too much oil, then ….. I put some bread and dip ….

    Oh, Greek salads are one of my favorites. My husband I just found a greek restaurant near us and we love it…they were originally from where we lived before moving down South.
